Sausage Muffins with Bisquick

Quick and easy savory muffins that combine ground sausage and cheddar cheese for a delicious breakfast treat.

  • 1 pound ground breakfast sausage
  • 1 cup shredded cheddar cheese
  • 4 large eggs
  • 1 cup Bisquick Baking Mix

Instructions

  1. In a large skillet over medium heat, brown the ground sausage until fully cooked, about 5-7 minutes. Drain excess fat.
  2. Preheat your oven to 350°F (175°C).
  3. In a large bowl, whisk together the eggs, cheddar cheese, and Bisquick mix until smooth. Stir in the cooked sausage.
  4. Grease a 12-cup muffin pan generously.
  5. Divide the muffin mixture evenly among the muffin cups, filling each about ¾ of the way full.
  6. Bake for 18-20 minutes, until golden brown and a toothpick comes out clean.
  7. Allow muffins to cool in the pan for 5 minutes before transferring to a wire rack.

Notes

Store leftover muffins in an airtight container at room temperature for up to 3 days or in the fridge for up to a week. They freeze beautifully for up to 3 months.
