Savory Sausage Pasta

A delightful blend of savory Italian sausage, cherry tomatoes, and vibrant vegetables in a comforting pasta dish.

  • 8 oz pasta (like penne or fettuccine)
  • 1 lb Italian sausage (mild or your choice)
  • 1 cup cherry tomatoes, halved
  • 1 bell pepper, chopped
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 cups spinach (optional)
  • 2 cups chicken or vegetable broth
  • Olive oil (for sautéing)
  • Salt and pepper to taste
  • Parmesan cheese for serving

Instructions

  1. In a large pan, heat olive oil over medium heat until shimmering (about 2 minutes).
  2. Add the diced onion and bell pepper, sauté until softened, about 5 minutes.
  3. Add the sausage, cooking until browned, about 6-8 minutes.
  4. Stir in the garlic and cherry tomatoes, cooking for another minute.
  5. Add the pasta and broth, bringing to a boil.
  6. Reduce to a simmer and cook until the pasta is al dente, about 10-12 minutes.
  7. Stir in the spinach until wilted, about 2 minutes.
  8. Season with salt and pepper to taste.
  9. Serve hot with freshly grated Parmesan cheese on top.

Notes

Avoid overcooking your pasta unless you prefer it softer.
