Ingredients

Scale
  • 1 lb Italian sausage
  • 2 cups corn (fresh, canned, or frozen)
  • 2 bell peppers (mixed colors, chopped)
  • 2 cups carrots (chopped)
  • 2 cups potatoes (Yukon gold or russet, diced)
  • 6 cups low-sodium chicken or vegetable broth
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried oregano

Instructions

  1. In a large pot, add the sausage over medium heat. Cook until browned, approximately 5-7 minutes, breaking it up with a spatula.
  2. Stir in the chopped bell peppers, carrots, and diced potatoes. Sauté for about 3-4 minutes until the veggies soften slightly.
  3. Pour in 6 cups of broth and add the corn. Bring to a gentle boil.
  4. Reduce heat and allow the soup to simmer uncovered for 15-20 minutes, or until the vegetables are tender.
  5. Taste and adjust the seasoning as needed.
  6. Ladle the soup into bowls and serve warm, garnished with fresh parsley or grated cheese.

Notes

Store leftovers in an airtight container in the fridge for up to 4 days; freeze for up to 3 months. Customize vegetables based on personal preference.
