Savory Sautéed Spinach and Onions

A flavorful and comforting side dish that pairs well with any meal.

Ingredients

  • 4 cups fresh baby spinach
  • 1 medium onion, thinly sliced (sweet or yellow)
  • 2 tablespoons extra virgin olive oil
  • Kosher salt, to taste
  • Freshly cracked black pepper, to taste
  • 2 cloves garlic, minced (optional)

Instructions

  1. Heat 2 tablespoons of olive oil in a large skillet over medium heat until shimmering, about 1-2 minutes.
  2. Add the sliced onions and sauté for 3-4 minutes until translucent and golden.
  3. If using, add minced garlic and cook for an additional minute until fragrant.
  4. Add the spinach in clusters; sauté for about 2-3 minutes until just wilted.
  5. Season with salt and pepper to taste.
  6. Serve warm as a delightful side dish.

Notes

Feel free to customize with chili flakes or toasted pine nuts for added flavor and texture.
