  • 1/4 cup Olive Oil
  • 3 cloves Garlic, minced
  • 1 tsp Salt
  • 1/2 tsp Pepper
  • 2 cups Mixed Fresh Vegetables (cucumbers, tomatoes, bell peppers)
  • 1 cup Quinoa or Rice (optional)

Instructions

  1. Preheat the grill to medium-high heat.
  2. In a medium bowl, whisk together lemon juice, dill, olive oil, garlic, salt, and pepper to create the marinade.
  3. Marinate the chicken breasts for at least 30 minutes.
  4. Grill the marinated chicken for about 6-7 minutes per side or until the internal temperature reaches 165°F.
  5. Let the chicken rest for 5-10 minutes, then slice.
  6. Cook quinoa or rice according to package directions, then fluff with a fork.
  7. Assemble bowls by starting with a base of quinoa/rice, topped with sliced chicken and fresh vegetables.
  8. Drizzle with any remaining dressing and serve immediately or store for meal prep.
