Irresistible Sesame Sweet Potato Glass Noodles

A delightful dish featuring chewy sweet potato glass noodles, sautéed kale, and a rich sesame sauce that embodies comfort food.

Ingredients

  • 400 g dried glass noodles
  • 4 cups kale, stems removed and cut into 3” pieces
  • 2 shallots, julienned
  • 5 cloves garlic, sliced thinly
  • 5 stalks green onions, separated into whites and greens
  • 2 tbsp grapeseed oil
  • 3 tbsp sesame oil
  • 3 tbsp soy sauce
  • 3 tbsp sweet soy sauce (kecap manis)
  • 1 tbsp honey
  • Sesame seeds for garnish
  • Green parts of green onions for garnish
  • Chili crisp (optional)

Instructions

  1. In a large skillet, heat grapeseed oil over medium heat. Sauté shallots for 2-3 minutes until browned. Add green onion whites and garlic; sauté for another 2 minutes until golden.
  2. Add kale to the skillet, sauté for 2-3 minutes. Add 2 tbsp water, cover, and cook for 3 minutes until kale is wilted. Set aside.
  3. In a bowl, whisk together sesame oil, soy sauce, sweet soy sauce, and honey.
  4. Cook the glass noodles according to package instructions (about 4-5 minutes). Drain and rinse under cold water.
  5. In a large bowl, toss warm noodles with the sauce. Add the kale mixture and toss again gently.
  6. Serve garnished with sesame seeds, green onion greens, and chili crisp if desired.

Notes

Perfect the texture of the noodles by not overcooking them. Store leftovers in an airtight container in the fridge for up to 3 days.
