Shrimp, Avocado, and Cucumber Bites

Delightful appetizer featuring fresh shrimp, creamy avocado, and crunchy cucumber, perfect for summer gatherings.

Ingredients

  • 1 lb shrimp (fresh or frozen)
  • 2 ripe avocados
  • 1 large cucumber (Persian or English)
  • Juice of 1 lime
  • 2 cloves garlic (minced)
  • Salt and pepper to taste
  • Fresh herbs (cilantro or parsley) for garnish

Instructions

  1. In a pot of boiling salted water, cook the shrimp until they are pink and opaque, about 3-5 minutes. Drain and set aside to cool.
  2. While the shrimp cools, dice the avocado and cucumber into bite-sized pieces.
  3. In a mixing bowl, combine the cooled shrimp, diced avocado, cucumber, lime juice, minced garlic, and season with salt and pepper to taste.
  4. Gently fold the mixture to avoid mashing the avocado.
  5. Serve on small rounds of cucumber or in lettuce leaves and garnish with freshly chopped herbs.

Notes

Best enjoyed fresh. Can be prepared with variations like adding diced jalapeños for a kick or tropical fruits for a twist.
