4 quarts hot water
1 large red onion or yellow onion, sliced into 4 – 6 wedges
1 garlic bulb, whole head, halved horizontally
1/2 cup Old Bay seasoning: A must-have for authentic flavor.
1 1/2 Tbsp fresh thyme leaves or 1 1/2 tsp dried
1 1/2 lbs medium red potatoes, cut into fourths
Salt and pepper to taste: Essential for balancing flavors.
4 ears of corn, husked, cut into fourths or broken into halves
14 oz. Andouille sausage, sliced into 1-inch thick pieces
1 1/2 lbs shrimp, deveined, peeled if preferred
6 Tbsp unsalted butter, melted
2 Tbsp fresh lemon juice, or more to tasteoverall dish.
2 Tbsp minced fresh parsley: For a fresh finish.
Instructions
In a large stockpot, bring water to a boil. Add Old Bay seasoning, salt, peppercorns, onion, garlic, and lemon.
Add potatoes and cook for 10 minutes.
Add sausage and corn, and cook for another 5 minutes.
Add shrimp and cook for 2-3 minutes, until pink and opaque.
Drain the boil and transfer to a large serving platter or spread on a table covered with newspaper.
Drizzle with melted butter and sprinkle with additional Old Bay seasoning if desired.
Serve immediately with lemon wedges and crusty bread.
Notes
For extra flavor, add beer or chicken broth to the boiling water.
Adjust the amount of Old Bay seasoning to taste preference.
Serve with cocktail sauce, hot sauce, and melted butter on the side.
