  • 8 ounces high-protein edamame noodles
  • 2 tablespoons olive oil
  • 1 bell pepper, thinly sliced
  • 1 cup broccoli florets
  • 1 cup snap peas
  • 2 cloves garlic, minced
  • 1 inch fresh ginger, grated
  • 3 tablespoons soy sauce
  • 2 teaspoons sesame oil
  • Salt and pepper to taste
  • Green onions and sesame seeds for garnish (optional)

Instructions

  1. Heat the oil in a large skillet or wok over medium-high heat until shimmering.
  2. Add minced garlic and grated ginger, stirring for about 1 minute until fragrant.
  3. Add shrimp in a single layer; cook for 1-2 minutes per side until pink and opaque, then remove to a plate.
  4. Toss in sliced bell pepper, broccoli, and snap peas in the same pan; stir-fry for 3-5 minutes.
  5. Prepare edamame noodles according to package instructions, then drain.
  6. Return shrimp to the pan, add drained noodles, soy sauce, and sesame oil; toss to combine.
  7. Adjust seasoning with salt and pepper, and serve immediately garnished with green onions and sesame seeds.

Notes

Store leftovers in an airtight container in the fridge for up to 2 days. Avoid overcrowding the pan when stir-frying.
