3 ripe bananas (about 1 1/2 cups mashed)
2 cups all-purpose flour
1 tsp baking soda
1/2 tsp salt
1/2 cup unsalted butter, softened
3/4 cup brown sugar
1/4 cup white sugar
2 large eggs
1 tsp vanilla extract
1/2 cup buttermilk (or milk + 1/2 tbsp lemon juice)
1/2 cup chopped walnuts (optional)
Instructions
Preheat oven to 350°F (175°C). Grease a 9×9 inch baking pan.
In a medium bowl, mash bananas with a fork until smooth.
In another bowl, whisk together flour, baking soda, and salt.
In a large bowl, cream butter and sugars until light and fluffy (about 3 minutes).
Beat in eggs one at a time, then stir in vanilla and mashed bananas.
Alternately add flour mixture and buttermilk, beginning and ending with flour mixture.
Fold in walnuts if using. Pour batter into prepared pan.
Bake for 40-45 minutes until golden and a toothpick comes out clean.
Cool in pan for 10 minutes, then transfer to a wire rack.
Notes
Use very ripe bananas with brown spots for best flavor
For extra moisture, add 1/2 cup sour cream or yogurt
Can be made into 12 muffins (bake 20-25 minutes)
Dust with powdered sugar or top with cream cheese frosting
