1 lb ground beef (or turkey)
1 onion, diced
1 bell pepper, diced
3 cloves garlic, minced
1 can (15 oz) kidney beans, drained
1 can (15 oz) black beans, drained
1 can (28 oz) crushed tomatoes
1 can (8 oz) tomato sauce
1 cup beef broth
2 tbsp chili powder
1 tsp cumin
1 tsp paprika
1/2 tsp oregano
1/2 tsp salt
1/4 tsp black pepper
1/4 tsp cayenne pepper (optional)
Instructions
Brown ground beef in a large pot over medium heat, breaking it up as it cooks (about 5-7 minutes). Drain excess fat if needed.
Add onion, bell pepper, and garlic. Cook until softened (about 5 minutes).
Stir in all remaining ingredients (beans, tomatoes, broth, and spices). Bring to a simmer.
Reduce heat to low, cover, and let simmer for at least 30 minutes (up to 1 hour for deeper flavor), stirring occasionally.
Taste and adjust seasonings as needed. Add more broth if too thick.
Serve hot with optional toppings like shredded cheese, sour cream, or chopped onions.
Notes
For a thicker chili, mash some beans against the side of the pot.
This chili tastes even better the next day as flavors meld.
Freeze leftovers in airtight containers for up to 3 months.
Vegetarian version: Substitute beef with 1 cup quinoa or additional beans.
