2 medium cucumbers, thinly sliced
2 ripe avocados, diced
1/4 red onion, thinly sliced
1/4 cup fresh dill, chopped
2 tbsp fresh mint, chopped (optional)
2 tbsp extra virgin olive oil
1 lemon, juiced
1 tsp honey or maple syrup
1/2 tsp sea salt
1/4 tsp black pepper
1/4 tsp red pepper flakes (optional)
1/4 cup feta cheese, crumbled (optional)
Instructions
In a large bowl, combine sliced cucumbers, diced avocado, and red onion.
In a small bowl, whisk together olive oil, lemon juice, honey, salt, and black pepper to make the dressing.
Pour dressing over the salad and gently toss to combine, being careful not to mash the avocado.
Add fresh dill and mint (if using), and toss lightly.
Sprinkle with red pepper flakes and feta cheese (if using) just before serving.
Serve immediately or chill for 15 minutes to let flavors meld.
Notes
For best texture, prepare just before serving as avocados will brown
