Simple Roasted Potatoes and Carrots

A comforting side dish of roasted potatoes and carrots that’s easy to prepare and perfect for any meal.

  • 2 pounds potatoes, chopped
  • 1 pound carrots, peeled and chopped
  • 3 tablespoons olive oil
  • 2 teaspoons Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a large bowl, toss the chopped potatoes and carrots with olive oil, Italian seasoning, salt, and pepper.
  3. Spread the vegetables out in a single layer on a large baking sheet.
  4. Roast in the preheated oven for 25-30 minutes, turning halfway through.
  5. Serve hot and enjoy!

Notes

Make sure the vegetables are at room temperature before roasting for even cooking. Add a squeeze of lemon juice before serving for a pop of acidity.
