Sloppy Joe Sweet Potato Bowls

A comforting twist on classic Sloppy Joes featuring roasted sweet potatoes and a flavorful beef filling.

Ingredients

  • Nonstick Spray (avocado oil, ghee oil, or extra-light olive oil)
  • pounds sweet potatoes, diced
  • 3 tablespoons avocado oil
  • 1 tablespoon all-purpose seasoning salt
  • 1 teaspoon dried parsley
  • ½ teaspoon freshly ground black pepper
  • ¼ cup Parmesan cheese, freshly grated
  • pounds lean ground beef
  • 1¼ cups ketchup
  • ¼ cup water
  • 2 tablespoons sugar
  • 1 tablespoon prepared mustard
  • ½ teaspoon white vinegar
  • ½ teaspoon paprika
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper, freshly ground
  • For Garnishing: Sliced dill pickles, pickled red onions, sliced jalapeños, chives or green onions

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss diced sweet potatoes with avocado oil, seasoning salt, parsley, and black pepper in a bowl.
  3. Spread sweet potatoes on a lined baking sheet and roast for 25-30 minutes until fork-tender.
  4. In a skillet, brown ground beef over medium heat for 5-7 minutes. Drain excess fat.
  5. Stir in ketchup, water, sugar, mustard, vinegar, paprika, kosher salt, and black pepper. Simmer for 10-15 minutes.
  6. Serve the Sloppy Joe mixture over the roasted sweet potatoes, topped with garnishes.
