Slow-Cooked Creamy Chicken and Wild Rice Casserole

A comforting and creamy chicken and wild rice casserole that’s perfect for family gatherings.

  • 2 cups cooked wild rice
  • 2 cups shredded cooked chicken
  • 1 can cream of chicken soup
  • 1 cup chicken broth
  • 1 cup frozen mixed vegetables
  • 1 cup sour cream
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1 cup shredded cheese (optional)

Instructions

  1. In a slow cooker, combine the cooked wild rice, shredded chicken, cream of chicken soup, chicken broth, mixed vegetables, sour cream, garlic powder, salt, and pepper.
  2. Stir until everything is well combined.
  3. Drizzle olive oil on top and mix gently again.
  4. Cover and cook on low for 6-8 hours or until heated through and bubbling gently.
  5. If using, stir in the shredded cheese before serving.
  6. Spoon the warm casserole into bowls and enjoy!

Notes

For best results, ensure the rice is cooked and cooled to prevent clumping. Store leftovers in an airtight container for up to 3 days or freeze for up to 3 months.
