Slow Cooker Beef and Broccoli

A comforting family favorite, this Slow Cooker Beef and Broccoli features tender beef and vibrant broccoli in a rich, savory sauce.

  • 1 1/2 pounds beef chuck roast, sliced into thin strips
  • 1 cup beef broth
  • 1/2 cup low-sodium soy sauce
  • 1/3 cup dark brown sugar
  • 1 tablespoon sesame oil
  • 3 cloves garlic, minced
  • 2 tablespoons cornstarch
  • 3 cups frozen broccoli florets
  • Cooked rice for serving

Instructions

  1. Prepare the sauce: In a mixing bowl, whisk together the beef broth, soy sauce, brown sugar, sesame oil, and minced garlic.
  2. Add the sliced beef into the slow cooker and pour the sauce mixture over it, tossing gently to combine.
  3. Set your slow cooker to low and cook for 5-6 hours.
  4. Thicken the sauce: Mix 4 tablespoons of the sauce with 2 tablespoons of cornstarch and stir back into the slow cooker in the last 30 minutes of cooking.
  5. Add the frozen broccoli during the last 30 minutes to keep it vibrant and crisp.
  6. Serve the beef and broccoli over a bed of fluffy cooked rice.
