Savory Slow Cooker Caramelized Onion Pasta

A cozy pasta dish featuring slow-cooked caramelized onions, garlic, and herbs, topped with melted Parmesan.

  • 4 large yellow onions, thinly sliced
  • 3 tbsp olive oil or butter
  • 1 tsp salt
  • 1 tsp sugar (optional)
  • 4 cloves garlic, minced
  • 1/2 tsp dried thyme
  • 1/2 tsp dried rosemary
  • 1/4 cup vegetable broth
  • 1 lb pasta (spaghetti, fettuccine, or penne)
  • 1/2 cup Parmesan cheese, grated
  • Fresh parsley, chopped (for garnish)
  • Salt and pepper to taste

Instructions

  1. Slice those onions and add them to the slow cooker.
  2. Add olive oil or butter, salt, and optional sugar. Stir well to combine.
  3. Let it cook for 8-10 hours on low.
  4. Add minced garlic, thyme, rosemary, and vegetable broth 30 minutes before done.
  5. Cook pasta according to package instructions and reserve a cup of pasta water.
  6. Combine pasta with caramelized onions, adding reserved pasta water until creamy.
  7. Embellish with Parmesan cheese, salt, and pepper, and garnish with parsley.

Notes

Serve with a fresh salad or garlic bread. Leftovers can be stored in an airtight container for up to 4 days in the fridge.
