  • 2 Tablespoons Olive Oil
  • 2 lbs Boneless, Skinless Chicken Thighs
  • 1 Teaspoon Salt
  • 1 Teaspoon Black Pepper
  • 1 Large Yellow Onion, diced
  • 5 Cloves Garlic, minced
  • 1 Cup Chicken Broth
  • 1/2 Cup Sun Dried Tomatoes, chopped
  • 1 Teaspoon Dried Oregano
  • 1 Teaspoon Dried Basil
  • 1 Cup Heavy Cream
  • 1/2 Cup Grated Parmesan Cheese
  • 5 oz Fresh Spinach
  • 1 Tablespoon Cornstarch (optional)
  • Fresh Parsley for garnish

Instructions

  1. Pat the chicken thighs dry and season with salt and pepper.
  2. Heat olive oil in a skillet and sear chicken thighs for 3-4 minutes per side until golden brown.
  3. Transfer chicken to slow cooker.
  4. Sauté diced onion in the skillet for 4-5 minutes until soft.
  5. Add minced garlic and cook for another minute.
  6. Deglaze skillet with chicken broth, scraping up any bits.
  7. Pour the broth mixture over chicken in slow cooker.
  8. Add sun-dried tomatoes, oregano, and basil, mixing well.
  9. Cook on LOW for 4-6 hours or HIGH for 2-3 hours.
  10. Whisk together heavy cream and parmesan about 15 minutes pre-serving.
  11. Stir cream mixture into slow cooker with fresh spinach and cook until wilted.
  12. If needed, thicken sauce with cornstarch mixed with water.
  13. Serve garnished with fresh parsley.

Notes

For the best tenderness, opt for cooking on low. Make sure to keep an eye on the heavy cream while cooking to prevent curdling.
