Savory Slow Cooker Honey Soy Chicken

A comforting and effortless slow cooker dish featuring tender chicken thighs cooked in a sweet and savory honey soy sauce.

  • 2 lbs boneless, skinless chicken thighs
  • 1/2 cup low-sodium soy sauce
  • 1/2 cup honey
  • 2 tablespoons rice vinegar
  • 1 tablespoon toasted sesame oil
  • 4 cloves fresh garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1/2 teaspoon black pepper, freshly ground
  • 2 tablespoons cornstarch
  • 1/4 cup cold water
  • Sliced green onions, toasted sesame seeds, and fresh cilantro (optional)

Instructions

  1. In a medium bowl, whisk together soy sauce, honey, rice vinegar, sesame oil, garlic, ginger, and black pepper until well combined.
  2. Pat the chicken thighs dry and arrange them in a single layer at the bottom of the slow cooker.
  3. Gently pour the honey soy sauce mixture over the chicken thighs, ensuring they’re beautifully coated.
  4. Cover and cook on LOW for 5-6 hours or on HIGH for 3-4 hours until the chicken reaches an internal temperature of 165°F (74°C).
  5. Once cooked, shred the chicken using two forks.
  6. In a small bowl, mix cornstarch with cold water until smooth, then add it to the remaining sauce in the slow cooker.
  7. Set the slow cooker to HIGH and cook for an additional 15-20 minutes until the sauce thickens.
  8. Return the shredded chicken to the cooker and mix well to coat with the sauce.
  9. Serve hot over your favorite base and garnish with green onions and sesame seeds.

Notes

Make ahead of time by prepping the sauce the night before. Store leftovers in an airtight container for up to 3 days in the fridge or freeze for up to 3 months.
