  • 1 cup frozen corn
  • 2 tablespoons taco seasoning

Instructions

  1. Place chicken breasts in the slow cooker, laying them gently and slightly touching.
  2. Pour salsa over the chicken, ensuring even coating.
  3. Add black beans and corn, distributing them evenly.
  4. Sprinkle taco seasoning on top. Optionally, add smoked paprika or cumin.
  5. Cover and cook on low for 6-8 hours or high for 3-4 hours, ensuring chicken is submerged.
  6. Once cooked, shred the chicken and mix everything together.
  7. Serve in tacos, burritos, or on salads, with toppings as desired.

Notes

For added customization, include jalapeños or use a different type of salsa. Store leftovers in an airtight container for up to 4 days.
