Slow Cooker Sausage and Lentil Soup

A hearty and comforting blend of rich Italian sausage, tender lentils, and fresh vegetables, perfect for chilly days.

  • 1 pound Italian sausage
  • 1 cup lentils
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cloves garlic, minced
  • 6 cups vegetable or chicken broth
  • 1 can diced tomatoes (14.5 oz)
  • 1 teaspoon thyme
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a medium skillet, cook the Italian sausage over medium heat until brown and cooked through, about 5-7 minutes. Drain any excess fat.
  2. In your slow cooker, combine the browned sausage, lentils, onion, diced carrots and celery, minced garlic, broth, diced tomatoes, thyme, cumin, salt, and pepper. Stir well.
  3. Cover your slow cooker and set it to low for 360-480 minutes (6-8 hours) or on high for 180-240 minutes (3-4 hours).
  4. Once cooked, taste and adjust seasoning as necessary.
  5. Ladle the soup into bowls and garnish with fresh parsley.

Notes

For a spicier kick, add red pepper flakes or dash of hot sauce before serving. This soup keeps well in the fridge for up to 5 days.
