Delightful Slow Cooker White Chicken Chili

A warm and creamy white chicken chili that’s perfect for cozy evenings, filled with tender chicken and bold flavors.

  • 2 lbs boneless, skinless chicken breasts
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 cans (15 oz each) white beans, drained and rinsed
  • 1 can (15 oz) diced green chilies
  • 4 cups chicken broth
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • 1 cup corn (optional)
  • 1 cup sour cream (for serving)
  • Chopped cilantro (for serving)

Instructions

  1. Place the chicken breasts in the bottom of the slow cooker.
  2. Add the diced onion, minced garlic, white beans, green chilies, and chicken broth.
  3. Sprinkle in cumin, chili powder, salt, and pepper.
  4. If using, add corn now.
  5. Cover and cook on low for 6-8 hours until chicken is tender and shreds easily.
  6. Remove chicken, shred it, and return it to the slow cooker.
  7. Stir to combine and adjust seasoning as needed.
  8. Serve with a dollop of sour cream and chopped cilantro.

Notes

Great for meal prep and can be frozen for future meals. Adjust spices to your preference!
