Instructions

  1. Cook the Pasta: Bring salted water to a boil and cook spaghetti until al dente, about 8-10 minutes. Drain and reserve pasta water.
  2. Heat the Skillet: In a skillet, heat olive oil over medium heat for about 2 minutes.
  3. Sauté the Salmon: Add smoked salmon and sauté for about 2 minutes until warmed through.
  4. Whisk the Sauce: In a bowl, whisk together eggs, heavy cream, Parmesan, salt, and pepper until smooth.
  5. Combine It All: Add cooked spaghetti to the skillet, remove from heat, and quickly pour egg mixture over pasta, tossing until creamy. Add reserved pasta water if needed.
  6. Serve Immediately: Garnish with parsley and additional Parmesan. Enjoy while hot!
