S’mores Cookie Bars

Delicious S’mores Cookie Bars combining graham crackers, chocolate, and marshmallow for a nostalgic treat.

  • 1 cup graham cracker crumbs (about 10 full sheets, crushed)
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar, packed
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup chocolate chips (semi-sweet or milk)
  • 1 cup marshmallow crème

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×9 inch baking dish.
  2. In a bowl, mix together the graham cracker crumbs, flour, baking soda, and salt.
  3. Cream together the butter, brown sugar, and granulated sugar until light and fluffy.
  4. Beat in the egg and vanilla extract until smooth.
  5. Gradually mix in the dry ingredients until just combined.
  6. Fold in the chocolate chips.
  7. Press half of the cookie dough into the bottom of the prepared baking dish.
  8. Spread the marshmallow crème over the cookie base.
  9. Crumble the remaining cookie dough on top of the marshmallow.
  10. Bake for 25-30 minutes until golden brown.
  11. Allow to cool for 15 minutes before cutting into bars.

Notes

For best results, ensure butter is softened but not melted. Grease the pan properly to prevent sticking.
