Savory Smothered Turkey Necks

  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 cups chicken broth
  • 1 cup water
  • 2 tablespoons soy sauce
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme
  • 1 teaspoon black pepper
  • 1 teaspoon salt (adjust to taste)
  • 1 bay leaf
  • 2 cups sliced mushrooms (optional)
  • 1 cup chopped carrots (optional)
  • 1 cup chopped celery (optional)
  • 2 tablespoons cornstarch (optional, for thickening)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Rinse the turkey necks under cold water and pat them dry with paper towels.
  2. Season the turkey necks with salt, black pepper, and smoked paprika.
  3. In a large pot, heat olive oil over medium-high heat. Sear the turkey necks for 5-7 minutes on each side until browned. Remove and set aside.
  4. In the same pot, add chopped onion and sauté for 3-4 minutes until translucent.
  5. Add minced garlic and sauté for an additional minute.
  6. If using, add sliced mushrooms, chopped carrots, and celery to the pot and sauté for about 5 minutes.
  7. Return the browned turkey necks to the pot. Pour in chicken broth and water.
  8. Add soy sauce, Worcestershire sauce, dried thyme, and bay leaf. Stir to combine.
  9. Bring to a boil, then reduce heat to low. Cover and simmer for 1.5 to 2 hours until the turkey necks are tender.
  10. If desired, mix cornstarch with cold water to make a slurry, then gradually stir into the pot to thicken the sauce and cook for an additional 5-10 minutes.
  11. Adjust seasoning if necessary; remove and discard the bay leaf.
  12. Garnish with freshly chopped parsley before serving.
