Soft Chewy Ginger Molasses Cookies

  • 3/4 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1/4 cup granulated sugar (and additional for rolling)
  • 1 large egg
  • 1/4 cup molasses
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, whisk together flour, baking soda, salt, ground ginger, cinnamon, and cloves. Set aside.
  3. In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy, about 3-4 minutes.
  4. Beat in the egg, molasses, and vanilla extract until well combined.
  5. Gradually add the dry ingredients into the wet mixture, mixing until just combined.
  6. Roll the dough into small balls, about 1 inch in diameter, and roll them in granulated sugar.
  7. Place them on a baking sheet lined with parchment paper, spacing them about 2 inches apart.
  8. Bake for 8-10 minutes until the edges are set but the centers are slightly soft.
  9. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack.

Notes

Use high-quality spices for maximum flavor. Storing cookies in an airtight container will keep them fresh for up to a week. You can freeze the dough or the baked cookies for longer storage.
