Soft & Chewy Gingerbread Men Cookies

  • 1 1/2 tablespoons ground ginger
  • 1 1/2 teaspoons ground cinnamon
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon nutmeg
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup unsalted butter, softened (1 1/2 sticks)
  • 3/4 cup light brown sugar, packed
  • 1/2 cup molasses
  • 1 large egg (room temperature)
  • For the royal icing:
  • 2 1/2 cups powdered sugar
  • 4 tablespoons warm water
  • 2 tablespoons meringue powder
  • 1/2 teaspoon cream of tartar
  • Sprinkles of your choice for decoration

Instructions

  1. Preheat your oven to 350°F (175°C). In a large bowl, whisk together the flour, ginger, cinnamon, cloves, nutmeg, baking soda, and salt.
  2. In another bowl, beat the softened butter and brown sugar until creamy. Incorporate the egg and molasses, mixing until well blended.
  3. Gradually add the dry ingredients to the wet mixture and blend until a smooth dough forms. Don’t overmix!
  4. Cover the dough with plastic wrap and refrigerate for at least 2 hours or overnight for best results.
  5. On a floured surface, roll out the dough to about 1/4 inch thick. Cut into your favorite shapes using cookie cutters. Place on a parchment-lined baking sheet.
  6. Bake them in the oven for 8-10 minutes, or until the edges start to firm up.
  7. Let them cool completely before icing. For the royal icing, combine powdered sugar, meringue powder, and cream of tartar in a bowl. Gradually add warm water until it reaches the desired consistency. Decorate the cookies and allow the icing to set for at least 2 hours.

Quality matters when choosing spices. Ensure the butter is at room temperature for easy creaming with sugar. Refrigerating the dough helps maintain its shape when baking.
