Soft Gingerbread Cookie Bars

Delightfully soft and chewy gingerbread bars topped with spiced cream cheese frosting, perfect for the holiday season.

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 3/4 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1/2 cup molasses
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup spiced cream cheese frosting

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking pan or line it with parchment paper.
  2. In a mixing bowl, whisk together the flour, baking powder, ginger, cinnamon, nutmeg, and salt.
  3. In another bowl, beat the softened butter and brown sugar together until smooth and fluffy, about 2-3 minutes.
  4. Mix in the molasses, egg, and vanilla extract until fully blended.
  5. Gradually add the flour mixture to the wet ingredients until just combined.
  6. Pour the batter into your prepared baking pan, spreading it evenly.
  7. Bake in the preheated oven for about 25-30 minutes. Check for doneness with a toothpick.
  8. Allow the bars to cool in the pan for 10-15 minutes, then transfer to a wire rack to cool completely.
  9. Spread the spiced cream cheese frosting generously on top once cooled and cut into bars to serve.

Notes

For best results, allow the butter and egg to come to room temperature before mixing. The bars are best served after sitting for a day.
