The Ultimate Southern Potato Salad

A creamy and tangy Southern potato salad infused with nostalgia and perfect for summer gatherings.

Ingredients

  • 2 pounds Yukon Gold or red potatoes
  • 1 cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1/2 cup diced celery
  • 1/2 cup diced onion
  • 3 hard-boiled eggs, chopped
  • Salt and pepper to taste
  • Paprika for garnish

Instructions

  1. Peel and cube the potatoes. Boil in salted water until tender, about 15-20 minutes. Drain and let cool.
  2. In a large mixing bowl, combine mayonnaise, Dijon mustard, apple cider vinegar, salt, and pepper. Stir until smooth and creamy.
  3. Add cooled potatoes, celery, onions, and chopped hard-boiled eggs. Gently fold to combine.
  4. Taste the salad and adjust seasoning as needed.
  5. Cover and chill in the refrigerator for at least 30 minutes.
  6. Before serving, sprinkle with paprika for garnish.
