  • 1 cup vegetable oil
  • 4 large eggs
  • 3 cups grated carrots
  • 1 cup crushed pineapple (drained)
  • 1 cup chopped walnuts (optional)
  • 8 oz cream cheese (softened)
  • 1/2 cup unsalted butter (softened)
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. Combine the flour, sugar, baking soda, baking powder, cinnamon, nutmeg, and salt in a large bowl.
  3. Whisk together the vegetable oil and eggs in another bowl until smooth.
  4. Gradually add the wet ingredients to the dry mix, stirring gently until just combined.
  5. Fold in the carrots, pineapple, and walnuts (if using).
  6. Divide the batter evenly between the prepared pans.
  7. Bake for 25-30 minutes or until a toothpick comes out clean.
  8. Let the cakes cool in the pans for 10 minutes before transferring to a wire rack.
  9. Beat together the cream cheese and butter for the frosting until creamy.
  10. Spread frosting on one cake layer, stack the second layer, and frost the top and sides.
  11. Decorate with additional walnuts or carrots if desired, then slice and serve.

Ensure the butter and eggs are at room temperature before mixing for easier incorporation. Experiment with spices to enhance the flavor.
