Irresistible Spiced Pear and Cranberry Galette

A cozy fall dessert featuring sweet pears and tart cranberries in a flaky, rustic crust, perfect for any occasion.

  • 0.5 cup Unsalted butter, cold and cubed
  • 0.25 tsp Salt
  • 24 tbsp Ice water
  • 2 large Pears, peeled, cored, and thinly sliced
  • 0.75 cup Fresh or frozen cranberries
  • 0.33 cup Brown sugar, packed
  • 1 tbsp Lemon juice
  • 1 tsp Lemon zest
  • 1.5 tbsp Cornstarch
  • 1 tsp Ground cinnamon
  • 0.25 tsp Ground ginger
  • 0.125 tsp Nutmeg
  • 0.125 tsp Allspice
  • 0.5 tsp Vanilla extract (optional)
  • 1 Egg, beaten (for egg wash)
  • 1 tbsp Coarse sugar (for sprinkling)

Instructions

  1. Prepare the Dough: Combine flour and salt, cut in butter, add ice water to form a dough, chill for 1 hour.
  2. Make the Filling: Toss pears, cranberries, brown sugar, lemon juice, lemon zest, cornstarch, and spices, let sit for 10-15 minutes.
  3. Roll Out the Dough: Roll chilled dough into a 12-inch circle on a floured surface.
  4. Assemble the Galette: Transfer dough to a baking sheet, spoon filling into the center, fold edges over filling.
  5. Finish and Bake: Brush crust with beaten egg, sprinkle with sugar, bake at 400°F for 35-40 minutes until golden.
  6. Cool and Serve: Allow to cool slightly, serve warm with ice cream or whipped cream.

Notes

Chill everything to ensure a flaky crust. Assemble the galette a day in advance and bake when ready.
