  • 23 ripe but firm pears (Bosc or Anjou recommended)
  • 1/4 cup unsalted butter (for topping)
  • 1/2 cup packed brown sugar
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp ground ginger
  • 1/4 tsp ground cloves
  • 1/4 tsp salt
  • 1/2 cup unsalted butter (softened for batter)
  • 2/3 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup whole milk or buttermilk
  • 1/4 cup chopped walnuts or pecans (optional)
  • 1 tbsp bourbon, spiced rum, or maple syrup (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. Melt 1/4 cup of butter with 1/2 cup of brown sugar in a saucepan over medium heat until bubbling.
  3. Pour the butter and sugar mixture into the bottom of the prepared pan.
  4. Peel, core, and slice the pears, arranging them over the brown sugar mixture.
  5. In a bowl, whisk together flour, baking powder, baking soda, and spices.
  6. In a separate bowl, cream softened butter and sugar until fluffy.
  7. Beat in the eggs one at a time and then mix in vanilla extract.
  8. Alternately mix in the dry ingredients and milk, avoiding overmixing.
  9. Pour the batter onto the arranged pears and smooth the top.
  10. Bake for 40-45 minutes, or until a toothpick comes out clean.
  11. Cool for 15 minutes, then invert onto a serving plate.

Notes

Serve warm with ice cream or whipped cream. Store leftovers at room temperature for up to 2 days.
