  • 8 ounces fettuccine pasta
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 1 small onion (chopped)
  • 3 cloves garlic (minced)
  • 1 red bell pepper (chopped)
  • 1 cup mushrooms (sliced)
  • 1 jar (15 oz) Alfredo sauce
  • 1/2 cup Romano cheese (grated)
  • 1/4 cup heavy cream
  • 1/4 teaspoon cayenne pepper (optional)
  • Salt and black pepper to taste
  • Fresh parsley (chopped, for garnish)

Instructions

  1. Cook the Fettuccine: Bring a large pot of salted water to a boil. Add the fettuccine and cook according to package instructions until al dente, usually around 8-10 minutes. Drain and set aside.
  2. Sauté the Vegetables: In a large pan, melt the butter and olive oil over medium heat. Add the chopped onion and sauté for about 2 minutes until soft and translucent. Add the minced garlic, red bell pepper, and sliced mushrooms. Cook for another 2-3 minutes until the vegetables are softened and aromatic.
  3. Cook the Shrimp: Add the shrimp to the pan and cook for about 3-4 minutes, or until they turn firm and pink.
  4. Prepare the Sauce: Pour in the Alfredo sauce, Romano cheese, and heavy cream. Stir well and bring to a gentle simmer, cooking for about 5 minutes while stirring occasionally.
  5. Season: Add the cayenne pepper and season with salt and black pepper to taste.
  6. Combine: Gently add the cooked fettuccine to the sauce and shrimp mixture, tossing until each strand is coated.
  7. Garnish and Serve: Sprinkle fresh chopped parsley over the top before serving.

Notes

To enhance shrimp flavor, consider marinating them in lemon, garlic, and paprika before cooking.
