  • 12 hard-boiled eggs, peeled
  • 3 cloves garlic, smashed
  • ½ small onion, sliced
  • 2 jalapeños, sliced
  • ½ cup sliced carrots (optional)
  • 1 tbsp black peppercorns
  • 1 tsp mustard seeds
  • 1 tbsp sugar
  • 1 tbsp salt
  • 2 cups apple cider vinegar
  • 1 cup water
  • 1 bay leaf
  • 1 tsp red pepper flakes

Instructions

  1. In a saucepan, combine the apple cider vinegar, water, salt, sugar, black peppercorns, mustard seeds, red pepper flakes, and bay leaf. Bring the mixture to a rolling boil.
  2. In a large jar or airtight container, layer the hard-boiled eggs, garlic, onion, jalapeños, and carrots.
  3. Pour the warm brine over the eggs until they are fully submerged. Seal the container tightly.
  4. Let the jar cool at room temperature for 1 hour, then refrigerate for at least 3 days before consuming.
  5. Enjoy as a snack, in salads, or on a charcuterie platter.
