Irresistibly Spicy Potato Noodles

A comforting dish of chewy noodles paired with crispy potatoes and enveloped in a spicy sauce, perfect for a cozy dinner.

  • 200g egg noodles or rice noodles
  • 2 medium potatoes, peeled and thinly sliced
  • 2 tablespoons vegetable or sesame oil
  • 23 tablespoons chili sauce
  • 1 teaspoon low-sodium soy sauce
  • Salt to taste
  • Chopped green onions for garnish

Instructions

  1. Cook the noodles according to the package instructions, usually around 3-5 minutes. Drain and set aside.
  2. In a large skillet over medium heat, heat the oil until shimmering.
  3. Add the thinly sliced potatoes and sauté for about 8-10 minutes until golden and tender.
  4. Stir in the chili sauce and soy sauce, mixing well for about a minute.
  5. Gently add the cooked noodles to the skillet and toss everything together.
  6. Season with salt as needed.
  7. Finish with chopped green onions for garnish before serving.

Notes

For extra flavor, add a dash of sesame oil just before serving. This dish is also great for meal prep.
