Ingredients

Scale
  • 1 lb ground chicken (preferably thigh meat)
  • 1 cup fresh spinach, finely chopped
  • 1/2 cup shredded sharp cheddar cheese
  • 1/4 cup breadcrumbs (or almond flour for GF)
  • 1 large egg
  • 2 cloves garlic, minced
  • 1 tsp Worcestershire sauce
  • 1/2 tsp smoked paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp olive oil (for cooking)
  • For Serving:
  • 4 brioche or whole wheat buns
  • 1 avocado, sliced
  • 1 tomato, sliced
  • Spicy mayo (mix 1/4 cup mayo + 1 tsp sriracha)

Instructions

  1. Prep spinach: Blanch chopped spinach in boiling water for 30 seconds, drain, and squeeze out excess moisture.
  2. Make patties: In a bowl, combine chicken, spinach, cheddar, breadcrumbs, egg, garlic, Worcestershire, and spices. Mix gently (don’t overwork). Form into 4 equal patties.
  3. Chill: Refrigerate patties for 30 minutes to firm up.
  4. Cook: Heat oil in skillet over medium. Cook patties 5-6 minutes per side until internal temp reaches 165°F (74°C). Add cheese during last minute to melt.
  5. Toast buns lightly in the same pan.
  6. Assemble: Spread spicy mayo on buns. Stack patties with avocado and tomato. Serve immediately.

Notes

  • For grilling: Freeze patties 15 mins first to prevent sticking
  • Make ahead: Patties keep refrigerated for 1 day or frozen for 1 month
  • Extra moisture: Add 1 tbsp Greek yogurt to mixture if using lean chicken breast
  • Kid-friendly: Shape into mini sliders
  • Low-carb option: Serve in lettuce wraps instead of buns
