Spinach Stuffed Chicken Breast

  • 4 boneless, skinless chicken breasts (about 6 oz each)
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • For the Spinach Filling:
  • 2 cups fresh spinach, chopped (or 1 cup thawed frozen spinach, drained)
  • 4 oz (115g) cream cheese, softened
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1/2 tsp Italian seasoning
  • 1/4 tsp red pepper flakes (optional)

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a baking dish.
  2. In a bowl, mix together spinach, cream cheese, mozzarella, Parmesan, garlic, Italian seasoning, and red pepper flakes until well combined.
  3. Cut a horizontal pocket into each chicken breast, being careful not to cut all the way through.
  4. Stuff each chicken breast with 1/4 of the spinach mixture. Secure with toothpicks if needed.
  5. Rub chicken breasts with olive oil and season with salt and pepper.
  6. Place in prepared baking dish and bake for 25-30 minutes, or until chicken reaches 165°F (74°C) internally.
  7. For extra browning, broil for 2-3 minutes at the end.
  8. Let rest for 5 minutes before serving. Remove toothpicks if used.

  • For a crispier exterior, sear chicken in a skillet for 2-3 minutes per side before baking.
  • Substitute ricotta or feta cheese for cream cheese for a different flavor profile.
  • Add sun-dried tomatoes or mushrooms to the filling for extra flavor.
