Spooky Spaghetti and Cheese Stuffed Meatballs

A fun and delicious Halloween-themed dish featuring meatballs stuffed with gooey mozzarella cheese, served over spaghetti and topped with marinara sauce.

  • 1 pound ground beef (or turkey)
  • 1 cup Italian-seasoned breadcrumbs
  • 1 egg (room temperature)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 cup mozzarella cheese (cubed)
  • 1 teaspoon Italian seasoning
  • 8 ounces spaghetti
  • 2 cups marinara sauce
  • 1 tablespoon olive oil (extra virgin)
  • Fresh basil (for garnish)
  • Black olives (for decoration)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, combine ground beef, breadcrumbs, egg, garlic powder, onion powder, salt, pepper, and Italian seasoning. Mix gently until just combined.
  3. Flatten about 2 tablespoons of the meat mixture in your palm, place a cube of mozzarella in the center, and fold the meat around the cheese to form a ball.
  4. Place the meatballs on a baking sheet lined with parchment paper and repeat.
  5. Bake for 20-25 minutes until the meatballs are browned and reach an internal temperature of 165°F (74°C).
  6. While the meatballs are baking, cook the spaghetti according to package instructions until al dente.
  7. In a separate pan, heat the marinara sauce over medium heat until warmed through.
  8. Once the spaghetti is done, drain it and return it to the pot. Add a drizzle of olive oil to keep it from sticking.
  9. Serve the meatballs over the spaghetti, topped with marinara sauce, fresh basil, and black olives.

Notes

Use fresh ingredients for the best flavor. You can prepare the meatballs a day in advance and refrigerate them before baking.
