Ingredients

  • 1 cup (2 sticks) unsalted butter, softened
  • 2/3 cup granulated sugar
  • 3 large egg yolks
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon almond extract (optional)
  • 2 1/4 cups all-purpose flour
  • 1/2 teaspoon salt
  • Food coloring (optional)
  • Sprinkles or colored sugar for decorating (optional)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cream butter and sugar together in a large bowl until light and fluffy, about 3 minutes.
  3. Add egg yolks, vanilla, and almond extract (if using); beat until well combined.
  4. Mix in flour and salt gradually until dough comes together (do not overmix).
  5. Optional: Divide dough and tint with food coloring if desired.
  6. Fill cookie press with dough and press cookies onto ungreased baking sheets, spacing them about 1 inch apart.
  7. Decorate with sprinkles or colored sugar if desired.
  8. Bake 7-10 minutes or until edges are just barely golden.
  9. Cool on baking sheets for 2 minutes, then transfer to wire racks to cool completely.

Notes

  • Dough must be soft enough to go through the cookie press – if too stiff, let it warm slightly at room temperature.
  • If dough becomes too soft while working, chill it for 10-15 minutes.
  • Store cookies in an airtight container at room temperature for up to 2 weeks.
  • These cookies freeze well for up to 3 months.
