1 cup (2 sticks) unsalted butter, softened
2/3 cup granulated sugar
3 large egg yolks
1 teaspoon vanilla extract
1/4 teaspoon almond extract (optional)
2 1/4 cups all-purpose flour
1/2 teaspoon salt
Food coloring (optional)
Sprinkles or colored sugar for decorating (optional)
Instructions
Preheat oven to 375°F (190°C).
Cream butter and sugar together in a large bowl until light and fluffy, about 3 minutes.
Add egg yolks, vanilla, and almond extract (if using); beat until well combined.
Mix in flour and salt gradually until dough comes together (do not overmix).
Optional: Divide dough and tint with food coloring if desired.
Fill cookie press with dough and press cookies onto ungreased baking sheets, spacing them about 1 inch apart.
Decorate with sprinkles or colored sugar if desired.
Bake 7-10 minutes or until edges are just barely golden.
Cool on baking sheets for 2 minutes, then transfer to wire racks to cool completely.
Notes
Dough must be soft enough to go through the cookie press – if too stiff, let it warm slightly at room temperature.
If dough becomes too soft while working, chill it for 10-15 minutes.
Store cookies in an airtight container at room temperature for up to 2 weeks.
