  • ¼ cup granulated sugar
  • 1 tablespoon baking powder
  • ½ teaspoon baking soda
  • 1 tablespoon pumpkin pie spice
  • ½ teaspoon salt
  • ½ cup unsalted butter, cold and cubed
  • ¾ cup canned pumpkin puree
  • ½ cup heavy cream
  • 1 large egg

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, pumpkin pie spice, and salt until well combined.
  3. Cut in the butter using a pastry cutter or two forks until the mixture resembles coarse crumbs.
  4. In another bowl, mix the pumpkin puree, heavy cream, and egg. Pour this mixture into the dry ingredients and gently stir until combined.
  5. On a floured surface, knead the dough gently a few times until it holds together. Form it into a circle about 1-inch thick.
  6. Use a sharp knife or pizza cutter to cut the dough into 8 wedges. Transfer them to the prepared baking sheet.
  7. Bake for 15-20 minutes or until lightly golden on top.
  8. Remove from the oven and let cool for a few minutes before serving.

Notes

For perfectly flaky scones, ensure the butter is cold! You can also freeze the butter for about 15 minutes before using.
