  • ½ tsp baking powder
  • ¼ tsp salt
  • 1 cup (150g) diced fresh strawberries
  • 1 tbsp flour (for tossing berries)
  • For Lemon Glaze:
  • ½ cup (60g) powdered sugar
  • 1 tbsp fresh lemon juice
  • ½ tsp lemon zest

Instructions

  1. Prep: Preheat oven to 350°F (175°C). Line 8×8 pan with parchment.
  2. Mix wet ingredients: Whisk melted butter and sugar. Beat in egg, then lemon zest, juice, and vanilla.
  3. Add dry ingredients: Gently fold in flour, baking powder, and salt until just combined.
  4. Prepare berries: Toss diced strawberries with 1 tbsp flour, then fold into batter.
  5. Bake: Spread batter in pan. Bake 25-30 minutes until edges are golden (center should be slightly soft).
  6. Cool: Let cool completely in pan.
  7. Glaze: Whisk glaze ingredients and drizzle over cooled blondies. Let set before cutting.
