1 cup (150g) diced fresh strawberries
1 tbsp flour (for tossing berries)
For Lemon Glaze:
½ cup (60g) powdered sugar
1 tbsp fresh lemon juice
½ tsp lemon zest
Instructions
Prep: Preheat oven to 350°F (175°C). Line 8×8 pan with parchment.
Mix wet ingredients: Whisk melted butter and sugar. Beat in egg, then lemon zest, juice, and vanilla.
Add dry ingredients: Gently fold in flour, baking powder, and salt until just combined.
Prepare berries: Toss diced strawberries with 1 tbsp flour, then fold into batter.
Bake: Spread batter in pan. Bake 25-30 minutes until edges are golden (center should be slightly soft).
Cool: Let cool completely in pan.
Glaze: Whisk glaze ingredients and drizzle over cooled blondies. Let set before cutting.
