  • 3 cups white chocolate chips
  • 1 (14 oz) can sweetened condensed milk
  • 1 (3 oz) box strawberry gelatin mix
  • 1 teaspoon vanilla extract
  • 1 cup shortbread cookies, crushed
  • 1/4 cup freeze-dried strawberries, crushed (optional)

Instructions

  1. Line an 8×8-inch baking pan with parchment paper, leaving overhang for easy removal.
  2. In a microwave-safe bowl, combine white chocolate chips, sweetened condensed milk, and butter. Microwave in 30-second intervals, stirring between each, until smooth.
  3. Stir in vanilla extract and a pinch of salt.
  4. Reserve 2 tbsp of crushed freeze-dried strawberries for topping. Gently fold the remaining strawberries and crushed shortbread into the fudge mixture.
  5. If desired, add a few drops of food coloring and swirl lightly for a marbled effect.
  6. Pour the mixture into the prepared pan and spread evenly. Sprinkle with reserved crushed strawberries and additional shortbread crumbs.
  7. Refrigerate for at least 4 hours, or until firm. Cut into squares and serve.

  • For a stronger strawberry flavor, add 1/4 tsp strawberry extract.
  • Store in an airtight container in the refrigerator for up to 2 weeks.
  • Freeze-dried strawberries provide intense flavor without adding moisture; do not substitute with fresh strawberries.
