Irresistible Stuffed Chicken Breasts with Savory Stuffing

  • 3 tbsp unsalted butter, room temperature
  • 2 celery stalks, finely diced
  • ½ medium onion, finely diced
  • 6 oz seasoned dried bread cubes (about 4 cups)
  • 1 cup low sodium chicken broth
  • 4 boneless, skinless chicken breasts (about 3 pounds)
  • 1 tbsp extra virgin olive oil
  • 1 tbsp Italian seasoning
  • 1 tsp paprika
  • ½ tsp kosher salt
  • ½ tsp black pepper

Instructions

  1. In a large skillet over medium heat, melt the 3 tbsp of butter. Add the diced celery and onions and sauté for about 5 minutes until softened.
  2. In a large bowl, mix the sautéed vegetables with the seasoned bread cubes. Pour in the 1 cup of chicken broth and stir until just moistened.
  3. Butterfly each chicken breast to create a pocket, season with olive oil, Italian seasoning, paprika, salt, and pepper.
  4. Generously fill each pocket with the stuffing mixture.
  5. For the air fryer method, preheat to 375°F (190°C) and cook for 25-30 minutes until internal temperature reaches 165°F (75°C).
  6. For the oven method, preheat to 375°F (190°C), bake covered for 30 minutes, then uncover for an additional 10 minutes for browning.

Notes

Ensure chicken is at room temperature before cooking. Leftovers can be shredded for sandwiches or salads.
