  • 1 teaspoon cream of tartar
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, whip egg whites and cream of tartar until soft peaks form.
  3. Gradually add powdered erythritol, whipping until stiff peaks form.
  4. Gently fold in the flour, vanilla, and salt until just combined.
  5. Pour the batter into an ungreased angel food cake pan.
  6. Bake for 30-35 minutes until golden brown and a toothpick comes out clean.
  7. Invert the pan to cool completely.

Notes

Use room temperature egg whites for the best results and avoid over-mixing to maintain texture.
