Ingredients

  • 1 cup Cherry Tomatoes, halved
  • 1 large Cucumber, sliced
  • 1 ripe Avocado, diced
  • ½ cup Feta Cheese, crumbled
  • 3 tablespoons Olive Oil
  • 1 tablespoon Lemon Juice
  • Salt and Pepper, to taste

Instructions

  1. In a large bowl, combine mixed greens, cherry tomatoes, and sliced cucumber. Gently toss to combine.
  2. Dice the ripe avocado and crumble the feta cheese. Fold them into the salad.
  3. Drizzle olive oil and lemon juice over the salad. Season with salt and pepper.
  4. Gently toss again to coat all ingredients without mashing the avocado.
