Stuffed French Toast with Feta and Sun-Dried Tomatoes

A delightful twist on traditional French toast, stuffed with flavorful feta and sun-dried tomatoes, perfect for any breakfast or brunch occasion.

  • 8 thick slices brioche or challah bread
  • 4 large eggs
  • 1/2 cup milk
  • 1/2 cup crumbled feta cheese
  • 1/3 cup sun-dried tomatoes, chopped
  • 2 tablespoons fresh basil, chopped
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons butter for cooking

Instructions

  1. Start by slicing your brioche or challah into thick slices, about 1 inch each.
  2. In a mixing bowl, combine the eggs, milk, salt, and pepper, whisking until well-blended.
  3. Make a small incision in the side of each bread slice to create a pocket.
  4. Stuff the pockets with crumbled feta and chopped sun-dried tomatoes.
  5. Preheat a skillet over medium heat and add olive oil.
  6. Dunk each stuffed slice of bread into the egg mixture, coating both sides.
  7. Cook each slice for 3-4 minutes on each side until golden brown.
  8. Serve with a sprinkle of fresh basil on top or a drizzle of honey.

Notes

Consider adding sautéed spinach or mushrooms for extra flavor. For vegan, use silken tofu and plant-based milk.
