Savory Sweet Potato Apple Turkey Bake

A comforting dish that combines sweet potatoes, apples, and turkey, perfect for family gatherings.

  • 2 cups chicken stock (low sodium)
  • 1/4 cup Rogers Porridge Oats & Healthy Grains
  • 1 onion (diced)
  • 1 medium sweet potato (peeled & cut into 1/2″ slices)
  • 2 apples (unpeeled, cored, and sliced into 1/2” slices)
  • 1 lb cooked turkey slices
  • 2 tbsp fresh thyme leaves
  • 1 tbsp fresh sage leaves (chopped)
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1/2 cup Rogers Porridge Oats & Healthy Grains (for topping)
  • 3 tbsp Rogers Unbleached All-Purpose Flour
  • 1/4 cup Parmesan Cheese (grated)
  • 3 tbsp butter (melted)
  • 1 tbsp parsley (chopped)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Lightly coat a 9″ x 5″ loaf pan with cooking spray.
  3. In a medium saucepan over medium-high heat, combine the chicken stock, diced onions, and oats. Bring to a gentle boil, then reduce heat and let simmer for 5 minutes.
  4. Remove the stock mixture from heat and fold in the thyme, sage, salt, and pepper.
  5. Layer the sweet potato slices, followed by the apple slices, and then the turkey slices in the prepared pan.
  6. Evenly pour your chicken stock mixture over the layered ingredients.
  7. In a smaller bowl, mix together the remaining oats, flour, Parmesan cheese, and melted butter.
  8. Spread the topping evenly over the dish. Cover with foil and bake for 30 minutes.
  9. After 30 minutes, remove the foil and continue baking for another 10-15 minutes until the sweet potatoes are fork-tender and the top is golden.
  10. Allow the dish to rest for 5 minutes before slicing.
