One-Pan Wonder: Scrumptious Sweet Potato and Ground Beef Skillet

A comforting one-pan meal that combines earthy sweet potatoes with savory ground beef, spiced to perfection and quick to prepare.

  • 1 lb lean ground beef
  • 2 medium sweet potatoes, peeled and cubed
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 1/2 tsp chili powder
  • Salt and pepper to taste
  • 1 cup beef broth or water (optional)
  • 1 bell pepper, diced (optional)
  • 1 can black beans, drained and rinsed (optional)
  • 1 cup shredded cheddar cheese (optional)
  • Fresh cilantro or parsley for garnish

Instructions

  1. In a large skillet, heat olive oil over medium-high heat until shimmering.
  2. Add diced onion and sauté until translucent, about 3-4 minutes.
  3. Stir in minced garlic and cook for another 30 seconds until fragrant.
  4. Add the ground beef, breaking it up, and cook until browned, about 5-7 minutes.
  5. While the beef cooks, peel and cube sweet potatoes into 1/2-inch pieces.
  6. Once the beef is browned, stir in the sweet potatoes.
  7. Sprinkle cumin, paprika, chili powder, salt, and pepper over the mixture and stir until combined.
  8. If needed, pour in beef broth or water, cover, and reduce heat to medium-low, simmer for about 12-15 minutes until sweet potatoes are tender.
  9. If adding optional ingredients like bell peppers or black beans, include them during the last 5 minutes of cooking.
  10. Uncover and cook for an additional 2-3 minutes to evaporate excess moisture.
  11. If desired, sprinkle shredded cheese on top and let it melt before serving.
  12. Garnish with fresh cilantro or parsley before serving.

Notes

Let ground beef reach room temperature for even cooking. Prepare vegetables while the skillet heats up to save time.
