Delicious Sweet Potato & Spinach Bake

A comforting and nutritious Sweet Potato & Spinach Bake that brings warmth and joy to the dinner table, combining sweet potatoes, spinach, and aromatic seasonings.

Ingredients

  • 2 large sweet potatoes
  • 3 cups fresh spinach
  • 1 cup feta cheese (optional)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Peel and slice the sweet potatoes into thin rounds, about 1/4 inch thick.
  3. In a skillet, heat olive oil over medium heat. Add chopped onion and garlic, sautéing until translucent (3-5 minutes).
  4. Add spinach and cook until wilted (3-4 minutes). Season with salt, pepper, oregano, and paprika.
  5. In a baking dish, layer half the sweet potato rounds. Add the spinach mixture, and sprinkle half the feta cheese on top. Repeat with remaining sweet potatoes, spinach, and feta.
  6. Cover with aluminum foil and bake for 30-40 minutes until sweet potatoes are tender.
  7. Remove the foil and bake for an additional 10 minutes for a crispy top.
  8. Serve warm.

Notes

For an even creamier dish, mix in Greek yogurt or a splash of cream with the spinach. Leftovers can be stored in the fridge for up to 4 days or in the freezer for up to 2 months.
