1 pound ground beef or turkey
1 packet taco seasoning
6–8 small tortillas (corn or flour, or 4 cups tortilla chips)
2 cups shredded cheese (cheddar and Monterey Jack)
1 cup salsa
1 cup black beans (optional)
1 cup corn kernels (optional)
½ cup sour cream for topping (optional)
½ cup diced tomatoes for topping (optional)
¼ cup chopped cilantro for topping (optional)
½ avocado, sliced or diced for topping (optional)
Instructions
Preheat your oven to 375°F (190°C) and grease a 9×13-inch baking dish.
In a large skillet, brown the ground meat and drain excess grease. Stir in taco seasoning and a splash of water; let simmer for 2-3 minutes.
Spread a thin layer of salsa on the bottom of the baking dish. Layer tortillas or chips, add half of the meat mixture and sprinkle with cheese. Repeat layers, finishing with cheese on top.
Cover with foil and bake for 20 minutes. Remove foil and bake for an additional 10-15 minutes until bubbly and golden.
Cool for 5 minutes before slicing and adding optional toppings.
